The first time we visited Restaurante OPEN was at the end of 2020, even before we lived in Alicante. My husband Johan sells the BBQ-brand “Big Green Egg” and had just completed a two day cooking class in Madrid. We heard that OPEN was also cooking on this type of BBQ and went without a reservation. They were fully booked, but they had seats available at the bar, overlooking the kitchen. I remember Alberto showing us different kinds of dishes he was preparing for other customers. We enjoyed this informative evening very much. And the food of course!
Owners Javier Prados (1982, Madrid) and Alberto Calleiros (1977, Granada) started Restaurante OPEN in 2017. They wanted a type of restaurant that they thought didn’t exist yet. OPEN´s working philosophy is to achieve the best result with the best fresh product, without losing the product along the way. Simplicity, elegance and respect for traditional cuisine with contemporary techniques.
A Big Green Egg is also used in the OPEN kitchen for grilling and smoking. In short, a contemporary kitchen.
Their dishes are surprising in terms of combination of flavors. What about an oven-baked fig filled with foie in a turrón sauce?
Or: Scallops in a beef broth? Buttery soft tuna on toast with sun-dried tomatoes and homemade wasabi.
They did the design and renovation of the building themselves. They wanted a simple place with warmth and coziness, a place to feel at home.
After the first 4 years, Restaurante OPEN was included in the Michelin guide among the 55 best restaurants in the Valencian community. Still, Javier and Alberto do not relax and they continue with enthusiasm and hard work to provide the best for their customers.
